Vegan Soft Gingerbread Cake

Ingredients

  • 2 dl brown sugar
  • 0.5 dl rapeseed oil
  • 1 dl lingonberry jam
  • 1 flax egg (1 tablespoon ground flax seeds + 3 tablespoons water)
  • 1 dl oat milk
  • 3 dl flour
  • 1 teaspoon vanilla powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon cardamom
  • 1/2 teaspoon ginger
  • Pinch of salt

Preparation

  1. Preheat the oven to 200 degrees Celsius.

  2. Prepare the flax egg and set aside.

  3. Mix all the dry ingredients together in a separate bowl.

  4. In another bowl, whisk together the sugar, flax egg, and the remaining liquid ingredients.

  5. Combine the mixtures from both bowls and stir until smooth.

  6. Pour the batter into a greased baking form and bake for 35 to 40 minutes.

  7. Decorate the cake with a frosting made from powdered sugar and water, and add lingonberries if desired.

  8. Allow the cake to rest for a few hours before serving to enhance the flavors.
