Vegan Soft Gingerbread Cake
Ingredients
- 2 dl brown sugar
- 0.5 dl rapeseed oil
- 1 dl lingonberry jam
- 1 flax egg (1 tablespoon ground flax seeds + 3 tablespoons water)
- 1 dl oat milk
- 3 dl flour
- 1 teaspoon vanilla powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon cloves
- 1 teaspoon cardamom
- 1/2 teaspoon ginger
- Pinch of salt
Preparation
Preheat the oven to 200 degrees Celsius.
Prepare the flax egg and set aside.
Mix all the dry ingredients together in a separate bowl.
In another bowl, whisk together the sugar, flax egg, and the remaining liquid ingredients.
Combine the mixtures from both bowls and stir until smooth.
Pour the batter into a greased baking form and bake for 35 to 40 minutes.
Decorate the cake with a frosting made from powdered sugar and water, and add lingonberries if desired.
Allow the cake to rest for a few hours before serving to enhance the flavors.
