Easy Vegan Wild Blueberry Loaf Cake

Ingredients

  • 1 cup wild blueberries
  • 1 1/4 cups flour
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 2 tablespoons lemon juice
  • 1/2 cup plant-based milk
  • 2 tsp apple cider vinegar
  • 2 very ripe bananas
  • 1 cup coconut sugar
  • 1/2 cup coconut oil
  • 1 tsp baking soda
  • 2 tsp baking powder

Preparation

  1. Preheat the oven to 350°F

  2. Grease a loaf pan

  3. Toss the blueberries with 1 tablespoon of flour and set aside

  4. Melt the coconut oil

  5. Mash the bananas

  6. Mix the dry ingredients together well

  7. Mix the wet ingredients together

  8. Add the wet ingredients to the dry ingredients and mix well

  9. Fold in the blueberries

  10. Bake for 1 hour or until the center is cooked
