Wild Blueberry Loaf Cake

Ingredients

  • 1 cup wild blueberries
  • 1 1/4 cups flour
  • 1 tsp cinnamon
  • 1 tsp vanilla powder
  • 2 tbsp lemon juice
  • 1/2 cup plant-based milk
  • 2 tsp apple cider vinegar
  • 2 ripe bananas
  • 1 cup coconut sugar
  • 1/2 cup coconut oil
  • 1 tsp baking soda
  • 2 tsp baking powder

Preparation

  1. Preheat the oven to 350°F.

  2. Grease a loaf pan.

  3. Mix the dry ingredients together well.

  4. Mix the wet ingredients together.

  5. Add the wet mixture to the dry mixture and mix well.

  6. Fold in the blueberries.

  7. Bake for 1 hour or until the center is cooked. Enjoy.
