Pork Loin in Tamarind Sauce
Ingredients
- 1 lb pork loin
- 2 tbsp olive oil
- 1 cup tamarind pulp
- 1/4 cup BBQ sauce
- 1/4 cup red wine
- 2 tbsp panela
- 1/2 white onion
- 2 garlic cloves
- Paprika, garlic powder, ginger, thyme
- Salt and pepper to taste
Preparation
In a skillet, heat olive oil and sear the pork loin on both sides.
In the same skillet, brown the garlic and onion for the sauce.
In a blender, combine the garlic, onion, tamarind pulp, BBQ sauce, spices, red wine, and panela; blend until smooth.
Return the pork loin to the skillet with the sauce and cook for 10 minutes on low heat.
