Pork Loin in Tamarind Sauce

Ingredients

  • 1 lb pork loin
  • 2 tbsp olive oil
  • 1 cup tamarind pulp
  • 1/4 cup BBQ sauce
  • 1/4 cup red wine
  • 2 tbsp panela
  • 1/2 white onion
  • 2 garlic cloves
  • Paprika, garlic powder, ginger, thyme
  • Salt and pepper to taste

Preparation

  1. In a skillet, heat olive oil and sear the pork loin on both sides.

  2. In the same skillet, brown the garlic and onion for the sauce.

  3. In a blender, combine the garlic, onion, tamarind pulp, BBQ sauce, spices, red wine, and panela; blend until smooth.

  4. Return the pork loin to the skillet with the sauce and cook for 10 minutes on low heat.

  5. Enjoy.
