Sweet Potato Brownies with Chocolate

Ingredients

  • 1 cup mashed sweet potato
  • 1 cup peanut butter
  • 2 eggs
  • 2/3 cup maple syrup
  • 2 tsp pure vanilla extract
  • 2/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1 bar of Endangered Species Extreme Smooth Dark Chocolate, broken up into chunks

Preparation

  1. Cook the sweet potato by baking at 400F for 30-40 minutes or microwaving for about 8 minutes.

  2. Let it cool and peel the sweet potato.

  3. Preheat the oven to 350F for the brownies.

  4. Mash the sweet potato and measure out 1 cup.

  5. Add the mashed sweet potato to a large mixing bowl along with the peanut butter, eggs, pure maple syrup, and vanilla extract.

  6. Stir well until everything is well-combined.

  7. Stir in the cocoa powder and baking soda.

  8. Add in the chocolate chunks.

  9. Transfer the mixture to a 9-inch brownie pan lined with parchment paper.

  10. Bake for 25-30 minutes.

  11. Remove from oven, let cool, slice, and enjoy.
