Sweet Potato Brownies with Chocolate
Ingredients
- 1 cup mashed sweet potato
- 1 cup peanut butter
- 2 eggs
- 2/3 cup maple syrup
- 2 tsp pure vanilla extract
- 2/3 cup cocoa powder
- 1/2 tsp baking soda
- 1 bar of Endangered Species Extreme Smooth Dark Chocolate, broken up into chunks
Preparation
Cook the sweet potato by baking at 400F for 30-40 minutes or microwaving for about 8 minutes.
Let it cool and peel the sweet potato.
Preheat the oven to 350F for the brownies.
Mash the sweet potato and measure out 1 cup.
Add the mashed sweet potato to a large mixing bowl along with the peanut butter, eggs, pure maple syrup, and vanilla extract.
Stir well until everything is well-combined.
Stir in the cocoa powder and baking soda.
Add in the chocolate chunks.
Transfer the mixture to a 9-inch brownie pan lined with parchment paper.
Bake for 25-30 minutes.
Remove from oven, let cool, slice, and enjoy.
