Twice Baked Sweet Potatoes with Marshmallows and Pecans

Ingredients

  • 4 large sweet potatoes
  • 1/4 cup brown sugar
  • 1 orange (juice and zest)
  • 1 cup vegan marshmallows
  • 1/2 cup brown sugar pecans

Preparation

  1. Bake the sweet potatoes until soft.

  2. Scoop out the filling and combine with brown sugar and orange.

  3. Refill the potato skins with the mixture.

  4. Top with vegan marshmallows and brown sugar pecans.

  5. Bake again until crispy.
