Delicious Vegan Potato Pockets
Ingredients
- 650 g potato
- 350 g carrots or pumpkin
- 200 g oat flour
- 120 g potato starch
- pinch of nutmeg
- salt, pepper
Filling
- 1 onion
- 2 cloves of garlic
- 150 g spinach/kale, frozen
- 150 g tofu, crumbled
- 50 g cashews blend or crushed
- seasoning (herbs, nutmeg, pepper etc)
- nutritional yeast
Preparation
Boil potatoes, pumpkin, carrots, and sweet potatoes.
Drain and blend the boiled vegetables.
Mix oat flour, potato starch, nutmeg, salt, and pepper to form a dough.
For the filling, sauté onion and garlic, then add spinach/kale, crumbled tofu, and cashews. Season with herbs, nutmeg, pepper, and nutritional yeast.
Form pockets with the dough and fill them with the prepared filling.
Cook the pockets until golden brown.
