Delicious Vegan Potato Pockets

Ingredients

  • 650 g potato
  • 350 g carrots or pumpkin
  • 200 g oat flour
  • 120 g potato starch
  • pinch of nutmeg
  • salt, pepper

Filling

  • 1 onion
  • 2 cloves of garlic
  • 150 g spinach/kale, frozen
  • 150 g tofu, crumbled
  • 50 g cashews blend or crushed
  • seasoning (herbs, nutmeg, pepper etc)
  • nutritional yeast

Preparation

  1. Boil potatoes, pumpkin, carrots, and sweet potatoes.

  2. Drain and blend the boiled vegetables.

  3. Mix oat flour, potato starch, nutmeg, salt, and pepper to form a dough.

  4. For the filling, sauté onion and garlic, then add spinach/kale, crumbled tofu, and cashews. Season with herbs, nutmeg, pepper, and nutritional yeast.

  5. Form pockets with the dough and fill them with the prepared filling.

  6. Cook the pockets until golden brown.
