Three Bean Chilli Con Carne
Ingredients
- 1 tbsp coconut oil
- 1 white onion, finely died
- 2 cloves of garlic, mashed
- 1 small courgette, grated
- 1 medium carrot, grated
- 1 green pepper, diced
- 1 tsp mild chilli powder (add 2 tsp if you prefer a little heat)
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 cans chopped tomatoes
- 3 cans of beans of your choice (i use kidney beans, chickpeas and cannellini beans)
- 1 cup sweetcorn, tinned or frozen
- 2 tbsp balsamic vinegar
- 1 lemon
- 1 lime
Preparation
Heat the coconut oil in a large pan on the hob
Add the onion and fry over a medium heat for 2 minutes until it starts to soften
Add the garlic, grated courgette and grated carrot and fry for another 2 minutes
Add all of the spices to the pan and stir well for a minute or two to release the aromas
Pour in the tinned tomatoes, drain and add the canned beans to the pan, stir well and simmer for 15 minutes
Dice the green pepper and add to the pan along with the sweetcorn, balsamic vinegar, and juice of half a lemon
Stir it all in and bring to the boil, then simmer on a low heat for 10 minutes
Remove from the heat and add the juice of one lime
Serve with rice, guacamole, sour cream and finely chopped coriander
