Afelia's Fried Chicken Strips
Ingredients
- 700-900g chicken breasts cut into strips
- 3 cups homemade or Panko breadcrumbs
- 1 tbsp chilli flakes
- 2.5 tsp dried oregano
- 2 tsp garlic powder
- 2 tsp salt
- 1.5 tsp chilli powder
- 1.5 tsp paprika
- 1.5 tsp dried thyme
- 1 tsp sugar
- 1 tsp ground black pepper
Coating
- 1 cup plain flour
- 2 eggs
Preparation
In a large bowl, combine the breadcrumbs and spices, mix together, and set aside. Measure out 1 cup plain flour in a wide shallow bowl and whisk 2 eggs in another bowl, set aside.
Using a meat tenderiser or rolling pin, pound the chicken strips until flat to a thickness of 0.5cm.
Dredge the chicken in plain flour first, then dip in the whisked eggs, and finally coat with the seasoned breadcrumbs. Place on a flat surface until ready to cook.
Cook by deep frying in hot oil for 2-3 minutes per side until cooked and golden, or air fry at 180°C for 12-14 minutes after drizzling with oil, or bake at 220°C for 15-20 minutes until fully cooked and golden. Enjoy with chips, in pita with salad, or tossed in a salad.
