Artichoke and Spinach Rice Balls

Ingredients

  • 1 3/4 cups of cooked sushi rice
  • 3/4 cup of chopped artichokes hearts
  • 3/4 cup of wilted spinach
  • 1 cup of vegan cheese (we used @heidihoorganics smokey chia cheeze)

Batter

  • 3/4 cup + 1 tbs of water
  • 3/4 cup flour

Breading

  • 3/4 cup of flour
  • 3/4 cup of breadcrumbs
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

  1. Combine rice, artichoke, spinach, and cheese in a large bowl, stir until well combined, and place in the fridge for three hours.

  2. In a medium-sized bowl, combine the ingredients for the batter, stir well, and set aside.

  3. Combine the ingredients for the breading in a medium-sized bowl, stir well, and set aside.

  4. Fill a medium-sized pot with oil to cover each ball and heat to 350°.

  5. Scoop a small portion of the rice filling into your hands, form it into a ball, dip it into the batter and then the breading, covering well.

  6. Fry for 3 minutes or until golden brown, then set the rice balls onto a drying rack and repeat the process until finished.

  7. Garnish with sauce of choice and enjoy.
