Artichoke and Spinach Rice Balls
Ingredients
- 1 3/4 cups of cooked sushi rice
- 3/4 cup of chopped artichokes hearts
- 3/4 cup of wilted spinach
- 1 cup of vegan cheese (we used @heidihoorganics smokey chia cheeze)
Batter
- 3/4 cup + 1 tbs of water
- 3/4 cup flour
Breading
- 3/4 cup of flour
- 3/4 cup of breadcrumbs
- 1/2 tsp oregano
- 1/4 tsp salt
- 1/4 tsp pepper
Preparation
Combine rice, artichoke, spinach, and cheese in a large bowl, stir until well combined, and place in the fridge for three hours.
In a medium-sized bowl, combine the ingredients for the batter, stir well, and set aside.
Combine the ingredients for the breading in a medium-sized bowl, stir well, and set aside.
Fill a medium-sized pot with oil to cover each ball and heat to 350°.
Scoop a small portion of the rice filling into your hands, form it into a ball, dip it into the batter and then the breading, covering well.
Fry for 3 minutes or until golden brown, then set the rice balls onto a drying rack and repeat the process until finished.
Garnish with sauce of choice and enjoy.
