Authentic Saudi Kabsa with Brown Rice

Ingredients

  • 1-2 cups of potatoes, cut into large cubes
  • 1/2 cup carrots cut into large pieces
  • 2 cups onion cut into small pieces
  • 1 and a half cups of brown rice, washed and soaked for an hour
  • 2 tablespoons tomato paste
  • 1 cup tomato cut into small pieces
  • 1/3 cup parsley
  • 2 hot peppers (to taste)
  • 2 tablespoons of kabsa spices (or Bahraini spices )
  • 1 tablespoon of biryani spice
  • 1 tablespoon curry powder
  • 2 cardamoms
  • 2 cloves
  • 1/3 cup pomegranate molasses
  • Salt and Pepper

Preparation

  1. Fry the onions until it turns brown (important step)

  2. Add the potatoes and onions and stir for a minute

  3. Add tomato paste and small tomato pieces and stir until the oil separates

  4. Add the pomegranate molasses and all the remaining spices and stir from time to time until the sauce is homogeneous and the potatoes are done (10-15 minutes).

  5. Add the rice and add hot water so that it covers the surface of the rice

  6. Cover the pot and let it cook on a low heat until the rice is cooked and enjoy

  7. Serve with salad and spicy tomato sauce
