Vegan Tempeh Bacon Spinach Tomato Sandwich
Ingredients
- Seed bread
- Sliced tomato
- Baby spinach
Sauce
- 1 handful of fresh basil
- 2 cloves of garlic
- 1/4 cup of soaked cashew
- 2 tbs of filtered water
- 1/8 tsp of pink himalayan salt
- 1/8 tsp of black pepper
Bacon
- 8 oz of sliced tempeh
- 2 tbs of soy sauce
- 2 tbs of maple syrup
- 1/2 tsp of paprika
- 1/2 tsp of cumin
- Salt and pepper to taste
Preparation
For the sauce combine all ingredients into a pestle and mortar add blend until smooth. Set aside when finished.
Marinate tempeh in remaining ingredients for a few minutes. Cook on a large pan over medium heat for 3 minutes each side.
On one slice of bread spread sauce and on the other slice lay tomatoes followed by tempeh and spinach. Top with the other slice and enjoy.
