Baked Coconut Gluten-Free Fodmap Friendly Muesli

Ingredients

  • 80 grams coconut oil
  • 65 grams rice malt syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • rind from 1/2 an orange
  • muesli ?
  • in a large bowl, mix together:
  • 1/2 cup activated almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 30 grams chia seeds
  • 1/2 cup shredded coconut
  • 1 1/2 cups of puffed brown rice
  • 1 cup of sesame seeds

Preparation

  1. Then pour the spiced syrup over the top and mix. Make sure all the nuts and seeds are covered

  2. Lie the mixture out onto a baking tray and bake in the oven for 15 mins at 160 degrees. Allow to cool on the tray and store in a tightly sealed glass jar
