Baked Coconut Gluten-Free Fodmap Friendly Muesli
Ingredients
- 80 grams coconut oil
- 65 grams rice malt syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- rind from 1/2 an orange
- muesli ?
- in a large bowl, mix together:
- 1/2 cup activated almonds
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 30 grams chia seeds
- 1/2 cup shredded coconut
- 1 1/2 cups of puffed brown rice
- 1 cup of sesame seeds
Preparation
Then pour the spiced syrup over the top and mix. Make sure all the nuts and seeds are covered
Lie the mixture out onto a baking tray and bake in the oven for 15 mins at 160 degrees. Allow to cool on the tray and store in a tightly sealed glass jar
