Bbq Jackfruit Burger
Ingredients
- 3 20 oz cans of Young Green Jackfruit (in water or brine, not syrup)
- 1 cup vegetable stock
- 3/4 cup BBQ sauce (avoid overly sweet variations)
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne
- 1/2 teaspoon black pepper
Preparation
Drain the cans of jackfruit, rinse and pat dry
Cut the triangle pieces into smaller triangles keeping a bit of the core on each piece
Measure out all of your dry ingredients for the spice rub and place in a small bowl
Heat coconut oil on medium heat in a heavy pot that has a lid
Once hot, add the jackfruit and the spices in the bowl
Stir to evenly coat
Add the vegetable stock, stir and cover on medium heat for 15 minutes
Preheat oven to 400 degrees and line a sheet pan with parchment paper
After 15 minutes, remove the lid and break apart the jackfruit pieces a bit further using a wooden spatula
We want a bite to the end result so don’t break into too small of pieces, but just enough to achieve the “pulled-pork” effect
During this time all of the excess liquid should have soaked in or evaporated
Evenly distribute the jackfruit onto the lined sheet pan
Place in the oven for 15 minutes
After 15 minutes, remove pan, add 1/2 cup of the BBQ sauce, stir around to coat and return to oven for another 15 minutes
Remove; add remaining sauce, stir and serve
