Beet Hummus for Monday Blues

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 4 cooked beets
  • 1 garlic clove
  • 2 tbsp tahini
  • 3 tbsp lemon juice
  • 1 tsp coriander and 1 tsp cumin
  • 1 tbsp olive oil
  • 2-3 ice cubes, depending on desired smoothness
  • Lots of salt and pepper

Preparation

  1. Add all ingredients to your food processor and blend until smooth.

  2. Taste and adjust as necessary, adding more lemon or spice if needed.

  3. Transfer to a serving dish, drizzle with more olive oil, and sprinkle with sea salt, chili flakes, and hemp hearts.

  4. Serve with vegetables and/or crackers.
