Bit Pan of Mash and Served It with a Sausage and Bean Casserole/stew

Ingredients

  • 1 tin green lentils, drained and rinsed
  • 1 tsp chilli flakes
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • lots of black pepper
  • 1 tsp mixed herbs
  • 1 veg stock cube
  • a handful of frozen peas
  • boiling water

Preparation

  1. Pop a large pan/frying pan on the hob. Add a bit of oil and then add the chopped sausages. Fry until they are nearly cooked

  2. Add the onion and celery to the pan. Mix in and fry for 5-7 mins

  3. Add the garlic and leave to fry for another minute

  4. Add the drained lentils, baked beans, chopped tomatoes, chilli flakes, cumin, smoked paprika, black pepper, mixed herbs and stock cube. Mix together

  5. Grab the empty chopped tomatoes tin and fill with boiling water. Pour the water into the pan and mix together. Pop a lid on the top of the pan and leave to simmer for around 15-20 mins or until the sauce becomes thicker. Just before serving sprinkle in the frozen peas and leave to cook for 2 mins
