Blueberry Buckwheat Chia Parfait with Chocolate Drizzle
Ingredients
- 1/4 cup buckwheat groats soaked overnight
- 5-6 cashews soaked or 1-2 teaspoons nut butter
- 1 frozen banana
- 1/3 cup blueberries
- 1/2 cup plant milk
- Splash of vanilla
Preparation
Soak the buckwheat groats and cashews overnight.
Blend all ingredients in a high-power blender until smooth.
Layer the mixture as desired with additions like chia pudding, fresh fruit, granola, coconut yogurt, or chia jam.
