Caramelized Garlic Pasta with Vegetables

Ingredients

  • 500g pasta of your choice
  • 6 large heads of garlic
  • 1 cup oat milk
  • Zest of 1 large lemon
  • 3 tbsp olive oil
  • 1/4 cup chopped parsley
  • Salt & pepper
  • 2 heads broccoli, chopped
  • Handful green beans
  • 1/2 cup pasta water
  • Lemon juice to taste

Preparation

  1. Preheat the oven to 180C

  2. Prepare the garlic by removing the papery outer layers and slicing across the top

  3. Put into an ovenproof dish and drizzle the olive oil across the top

  4. Add a little salt

  5. Cover and roast for about 40 minutes till golden. Take out of the oven and set aside to cool a little

  6. Cook the pasta according to pack instructions

  7. For the last 1 minute of cooking time, add the vegetables

  8. Take 1/2 cup pasta water and then drain the pasta and veg all together

  9. Add the oat milk to a small blender. Add the caramelised garlic

  10. Add some salt and blend till smooth

  11. Pour the garlic into your serving dish. Add lemon zest and chopped parsley

  12. Add the pasta and veg. Add lemon to taste. Check for seasoning

  13. Enjoy

Tips

  1. The sauce can be made in advance to save time for quick meals

  2. Use any type of pasta you prefer, such as yellow pea pasta for added fiber and protein
