Cauliflower Rice Paella with Green Beans
Ingredients
- 2 tablespoons vegetable oil
- 1 garlic clove, minced
- 1 teaspoon cumin ground
- 1 teaspoon coriander ground
- 1 head of cauliflower, riced
- 3 cups green beans
- 200 g snow peas
- 1 carrot, grated
- 1/2 cup raw almonds or to taste
- 1 tablespoon lemon juice
- 1 teaspoon turmeric ground
- salt and pepper to taste
Preparation
In a large pan heat oil and add garlic, cumin and coriander
Cook for a couple of minutes
Add cauliflower, beans, peas, carrots, almonds and lemon juice, stir and cook for about 10 minutes or until cauliflower is soft
Add turmeric and cook for another 5 minutes
Have a taste and adjust seasonings
Serve warm garnished with fresh parsley or coriander
