Cauliflower Rice Paella with Green Beans

Ingredients

  • 2 tablespoons vegetable oil
  • 1 garlic clove, minced
  • 1 teaspoon cumin ground
  • 1 teaspoon coriander ground
  • 1 head of cauliflower, riced
  • 3 cups green beans
  • 200 g snow peas
  • 1 carrot, grated
  • 1/2 cup raw almonds or to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric ground
  • salt and pepper to taste

Preparation

  1. In a large pan heat oil and add garlic, cumin and coriander

  2. Cook for a couple of minutes

  3. Add cauliflower, beans, peas, carrots, almonds and lemon juice, stir and cook for about 10 minutes or until cauliflower is soft

  4. Add turmeric and cook for another 5 minutes

  5. Have a taste and adjust seasonings

  6. Serve warm garnished with fresh parsley or coriander

  7. Enjoy!
