Cheesy Smoked Sausage Spaghetti with Green Vegetables

Ingredients

  • 1 chopped onion
  • 2 cloves of garlic, chopped
  • A few chopped asparagus sprigs
  • Handful of chopped broccoli
  • Handful of edamame beans
  • 1/2 thinly sliced courgette (zucchini)
  • 2 chopped smoked sausages
  • 1 cup of dairy-free cream (oat cream)
  • 1/2 tsp English mustard
  • 3 tbsp nutritional yeast
  • 1/2 cup grated dairy-free cheese
  • Pinch of pink salt
  • Black pepper to taste

Preparation

  1. Cook pasta according to package instructions while making the sauce.

  2. In a large pan, heat 1 tbsp of oil. Add all the vegetables and cook on medium heat for a few minutes to soften.

  3. While the vegetables cook, in a bowl, combine the dairy-free cream, salt, pepper, nutritional yeast, grated cheese, and English mustard. Mix well.

  4. Add the creamy mixture to the pan with the vegetables, then add the chopped smoked sausages.

  5. Bring the mixture to a simmer and continue to simmer for a few minutes until the sauce thickens.

  6. Drain the cooked pasta and stir it into the sauce.

  7. Serve the Cheesy Smoked Sausage Spaghetti with Green Vegetables. Optionally, serve with garlic bread and salad.
