Cheesy Vegan Pasta Bake
Ingredients
- Onions
- Garlic
- Tinned chopped tomatoes
- Fresh basil
- Sundried tomatoes
- Sugar
- Balsamic vinegar
- Roasted cherry tomatoes
- Cooked red lentil pasta
- Sweetcorn
- Cooked vegan Cumberland sausages
- Spinach
- Artichoke from the jar
- Vegan cheese
Preparation
Roast cherry tomatoes until soft & blistered.
Fry an onion and some garlic until soft and fragrant.
Add tinned chopped tomatoes, sundried tomatoes, balsamic vinegar, and sugar. Cook for a bit on medium heat.
Add the roasted tomatoes and cook together until everything is soft and heated through.
Blend the sauce together using an immersion or normal blender.
Add cooked pasta to the pot.
Add any other extras: sweetcorn, cooked vegan sausages, spinach, artichoke, and loads of vegan cheese.
Put in the oven until the cheese has melted.
