Chili Cheese Fries for Dinner

Ingredients

  • one white onion
  • garlic (however much your heart tells you to
  • 1 diced red pepper and some shroomies
  • cumin
  • cayenne pepper
  • fresh chili or flakes and chili powder
  • veg stock
  • some passata
  • beans

Preparation

  1. Chop and fry one white onion in oil until nice n soft

  2. Add garlic (however much your heart tells you to), 1 diced red pepper and some shroomies

  3. Add some cumin, cayenne pepper, fresh chili or flakes and chili powder

  4. Season, season and season

  5. Add some veg stock and some passata, beans and bring to the boil

  6. Lower the heat and simmer for about 20 mins

  7. Sometimes I add a bit of bbq sauce which tastes delish, otherwise season to taste n enjoy
