Chocolate Chia Pudding


  • 3/4 cup cashews
  • 1/2 cup water
  • 1 T lemon juice
  • Small handful fresh mint leaves


  1. Soak cashews for at least 2 hours in cool water

  2. Drain and add to blender with other ingredients

  3. Blend until smooth

  4. Add water and continue blending until it has the consistency you prefer! Enjoy
