Creamy Baby Potato Curry
Ingredients
- baby potatoes: 500g
- oat cream: 1 c
- kashmiri chilli powder: 1/2 t
- turmeric powder: 2 t
- cumin seeds: 2 t
- black cardamom: 2
- green cardamom:2
- cloves: 2
- peppercorns: 4
- kashmiri chilli: 1
- powdered spices:
- kashmiri chilli powder: 1t
- ginger powder: 1 t
- fennel powder: 2 t
- pepper: 1 t
- garam masala: 1/2 t
- water: 11/2 c more for boiling potatoes
- salt to taste
- vegetable oil
Preparation
Boil baby potatoes in water for 10 minutes ( till almost done)
Cool peel and pierce each potato with a fork 3-4 time
Mix potatoes with turmeric and chilli powder
Shallow fry in vegetable oil till crispy or drizzle with vegetable oil and roast at 180 for 15 minutes
Heat 1 t oil in a pan and add the listed whole spices
Cook on a low flame till oil is fragrant
Add oat cream and water and the listed powdered spices
Bring to a simmer and throw in cooked potatoes and 1/2 c water
Put the lid on and cook on a low flame for 7- 10 minutes
