Creamy Coconut and Cauliflower Dahl

Ingredients

  • 50 g dairy-free butter
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon whole mustard seeds
  • 1 teaspoon turmeric
  • 1/2 teaspoon chipotle chilli powder
  • 1 teaspoon onion powder
  • 1 cup red lentils
  • 1 cup coconut milk
  • 2 cups water
  • 3 cups cooked cauliflower florets
  • Fresh coriander, for serving
  • Chili flakes, for serving (optional)

Preparation

  1. In a large frying pan, melt butter over medium heat and add all the spices. Cook for 30 seconds.

  2. Add lentils, coconut milk, and water. Stir to combine. Cook on low heat for 15 minutes until lentils are soft and dahl is thick.

  3. Add in cauliflower florets, mix to combine, and cook for another 5 minutes.

  4. Serve dahl warm with steamed rice and garnished with fresh coriander. Enjoy right away!
