Creamy One-Pot Red Curry Pasta
Ingredients
- 1 onion
- 2 garlic cloves
- 1 zucchini
- 1 red bell pepper
- 4 cups fusilli pasta
- 2 tbsp red curry paste
- 2 cans of tomatoes
- 1 can of coconut milk
- 2 handfuls of cherry tomatoes
- Salt and pepper
- 2 tbsp lemon juice
- Oil
Preparation
Chop the onion and garlic into small cubes.
Chop up the zucchini, red bell pepper, and cherry tomatoes.
Heat up oil in a pot.
Glaze the onion and garlic for a couple of minutes.
Add the chopped veggies and glaze for a couple more minutes.
Add the red curry paste, canned tomatoes, coconut milk, and spice with salt and pepper.
Cook for about 10 minutes.
Add the fusilli pasta and cook as long as the pasta needs based on package instructions.
Serve with an extra squeeze of lemon juice.
