Creamy Peanut Noodles with Veggies & Tempeh
Ingredients
- 1 (red) onion
- 1 garlic clove
- veggies of choice (fresh or frozen)
- 1 tbsp wok oil (or any other heatable oil)
- Sauce:•2 tbsp soy sauce
- 1 tbsp fresh lemon juice
- 1 small can of coconut milk (200ml)
- 1 tsp starch
- 1 big tbsp peanut butter
Preparation
Cut onion & garlic
Saute them together with the veggies & oil in a big pan
I used a frozen veggie mix & added frozen edamame & peas
Mix all ingredients for the sauce and pour it over the veggies
Cook on middle heat until it thickens a little
Add cooked noodles of your choice
Optional:Spice with salt/pepper/chilli flakes
Tempeh: cut the tempeh into slices/cubes and marinade it with 1tbsp soy sauce, 1 tbsp maple syrup & 1 tbsp lemon juice
Saute with a little bit of oil
