Creamy Peanut Noodles with Veggies & Tempeh

Ingredients

  • 1 (red) onion
  • 1 garlic clove
  • veggies of choice (fresh or frozen)
  • 1 tbsp wok oil (or any other heatable oil)
  • Sauce:•2 tbsp soy sauce
  • 1 tbsp fresh lemon juice
  • 1 small can of coconut milk (200ml)
  • 1 tsp starch
  • 1 big tbsp peanut butter

Preparation

  1. Cut onion & garlic

  2. Saute them together with the veggies & oil in a big pan

  3. I used a frozen veggie mix & added frozen edamame & peas

  4. Mix all ingredients for the sauce and pour it over the veggies

  5. Cook on middle heat until it thickens a little

  6. Add cooked noodles of your choice

  7. Optional:Spice with salt/pepper/chilli flakes

  8. Tempeh: cut the tempeh into slices/cubes and marinade it with 1tbsp soy sauce, 1 tbsp maple syrup & 1 tbsp lemon juice

  9. Saute with a little bit of oil
