Creamy Tomatoes and Sweet Garlic

Ingredients

  • 3 handfuls of cherry tomatoes
  • 2 whole garlic bulbs
  • 1 red onion
  • 1 handful of fresh rosemary
  • Salt and pepper
  • 60ml olive oil
  • 1 tablespoon lemon peel
  • 1 tablespoon balsamic vinegar

Preparation

  1. Preheat the oven to 200°C (400°F).

  2. Slice the red onion into thin slices.

  3. Place the cherry tomatoes in a baking dish.

  4. Cut the top of the garlic bulbs lengthwise and place the whole garlic bulbs in the baking dish.

  5. Sprinkle the sliced red onion and lemon peel on top.

  6. Roughly chop the fresh rosemary and add it to the dish.

  7. Drizzle the olive oil over the tomatoes, garlic, onion, and rosemary. Season with salt and pepper.

  8. Bake in the preheated oven for about 40 minutes.

  9. The dish is done when most of the tomatoes have slit open.

  10. Sprinkle balsamic vinegar on top and serve with fresh bread or pasta.
