Creamy Vegan Mac & Cheese with Nutritional Yeast Sauce

Ingredients

  • 3 boiled (or roasted) potatoes
  • 1 boiled carrot
  • 6 tbsp nutritional yeast
  • 2 tbsp tahini
  • 1/3 cup soy milk (or more if needed)
  • Spices: salt, pepper, turmeric, smoked paprika, garlic powder, onion flakes
  • 300g pasta of choice
  • Your favorite veggies (e.g., green peas and corn)

Preparation

  1. Begin by cooking your chosen pasta according to package instructions. While the pasta cooks, proceed with the sauce preparation.

  2. For the sauce, blend the boiled (or roasted) potatoes, boiled carrot, nutritional yeast, tahini, soy milk, and the spices (salt, pepper, turmeric, smoked paprika, garlic powder, onion flakes) until a smooth and creamy consistency is achieved. Adjust soy milk quantity for desired thickness.

  3. Once the pasta is cooked, drain it and return it to the pot.

  4. Pour the prepared sauce over the pasta and mix well to coat.

  5. Add your favorite veggies, such as green peas and corn, to the pasta and sauce mixture. Stir to combine.
