Easy Healthy Pumpkin Pancakes
Ingredients
- 1/3 cup organic buckwheat pancake mix
- 1/2 cup organic canned pumpkin
- 2 egg whites
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 cup almond milk
Toppings
- cinnamon
- @nutsnmore chocolate almond butter
Preparation
In a bowl, mix the dry ingredients: buckwheat pancake mix, cinnamon, and baking powder
In another bowl, mix the wet ingredients: canned pumpkin, egg whites, and almond milk
Combine the wet and dry mixtures until just blended, being careful not to overmix
Heat a non-stick pan or griddle over medium heat and lightly grease if necessary
Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook the other side until golden brown
Serve the pancakes topped with cinnamon and chocolate almond butter
