Easy Vegan Mince Pies with Shortbread Pastry

Ingredients

  • 3 parts plain flour
  • 2 parts vegan butter/margarine
  • 1 part icing sugar
  • 1 jar of mincemeat

Preparation

  1. Preheat the oven to 180 degrees Celsius and grease a muffin tin.

  2. In a mixing bowl, combine plain flour, vegan butter/margarine, and icing sugar. Use your hands to rub the ingredients together until they form a pastry dough.

  3. Place the pastry dough on a floured surface and roll it out with a rolling pin to a thickness of about 3-5mm. Use a cookie cutter to cut out circles from the dough.

  4. Place a circle of pastry dough into each muffin tin, gently pressing the pastry to fit the shape. Add a tablespoon of mincemeat to each pastry case, then top with another pastry circle. Press the edges of the circles together to seal the pies.

  5. Bake in the oven for 10-12 minutes or until the pies are golden brown. Allow the mince pies to cool in the tin for at least 15 minutes. Use a knife to loosen the edges and gently remove the pies from the tin.
