Easy Vegan Mince Pies with Shortbread Pastry
Ingredients
- 3 parts plain flour
- 2 parts vegan butter/margarine
- 1 part icing sugar
- 1 jar of mincemeat
Preparation
Preheat the oven to 180 degrees Celsius and grease a muffin tin.
In a mixing bowl, combine plain flour, vegan butter/margarine, and icing sugar. Use your hands to rub the ingredients together until they form a pastry dough.
Place the pastry dough on a floured surface and roll it out with a rolling pin to a thickness of about 3-5mm. Use a cookie cutter to cut out circles from the dough.
Place a circle of pastry dough into each muffin tin, gently pressing the pastry to fit the shape. Add a tablespoon of mincemeat to each pastry case, then top with another pastry circle. Press the edges of the circles together to seal the pies.
Bake in the oven for 10-12 minutes or until the pies are golden brown. Allow the mince pies to cool in the tin for at least 15 minutes. Use a knife to loosen the edges and gently remove the pies from the tin.
