Fennel Apple Salad with Tahini Dressing
Ingredients
- green apples, cored and thinly sliced ??1/2 cup chopped fennel fronds (the top) ??3 tbsp apple cider vinegar ??2 tbsp tahini
- 2 tbsp maple syrup (or agave)
- 3/4 tsp Himalayan Sea Salt
- 1/2 cup chopped walnuts
- 1/2 cup pomegranate seeds
Preparation
Blend apple cider vinegar, tahini, syrup and salt. ??Combine sliced fennel, sliced apples, and fennel fronds in a large bowl. Pour dressing over the fennel, apples and fronds and toss gently to combine. ??Garnish salad with walnuts and pomegranate seeds
