Fettuccine Alfredo

Ingredients

  • Tomato bruschetta - dice/cut small 4 Roma tomatoes, 1/4 cup red onion, 5 basil leafs, 2 garlic cloves, and put 1 tblspoon olive oil and pinch of salt and pepper! Mix it up and serve w chips, or like I did put it on mini baguettes and drizzled balsamic vinaigrette on top
  • Fettuccine Alfredo - Slice a small to medium yellow onion, 5 garlic cloves, add 1/2 cup veggie broth and let that sauté until all the liquid is absorbed. 1/2 cup of soaked cashews add that to blender with veggies, 1/2 cup of veggie broth, 3 tblspoon of nutritional yeast, salt and pepper to your preference, and 1-2 tblspoon of lemon juice!! Blend that up and pour on top of cooked fettuccine pasta
