Gluten-Free Vegan Sacher Torte Donuts

Ingredients

  • 1/2 cup non-dairy milk
  • 1/4 cup neutral flavored oil
  • 1/4 cup soft tofu
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract (optional)
  • 1/4 cup cane sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup cocoa powder
  • 3/4 cup finely ground almond flour
  • 1 cup gluten-free flour
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce

Glaze components

  • apricot jam
  • dark chocolate

Preparation

  1. Preheat oven to 375 F

  2. Whisk together all dry ingredients

  3. In a separate bowl vigorously whisk the wet ingredients or use a blender

  4. Oil two donut trays

  5. Divide batter to fill all 12 donut spots, using about 3-4 tablespoons per donut

  6. Bake for 16-18 minutes

  7. Carefully remove from donut pan and place on wire rack

  8. Brush with heated apricot jam while they are still warm

  9. Let cool

  10. Melt dark chocolate in the microwave to make ganache

  11. Top with ganache
