Healthy Pumpkin Chili

Ingredients

  • 1 15 ounce can pumpkin
  • 1 15 ounce can black beans
  • 1 15 ounce can diced tomatoes
  • 2 tbsp tomato paste
  • 3 cups chicken broth
  • 1/2 tsp pumpkin pie spice
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 lb cooked meat

Preparation

  1. Turn your pressure cooker on to sauté (I have the @mealthy pressure cooker)

  2. Add a little oil and brown 1 lb of ground beef with a little salt and pepper sprinkled on top. Sauté it until it’s browned

  3. Then drain and remove

  4. Add your veggies

  5. Onion diced, 2 peppers diced. Sauté for 2-3 minutes. Turn off the sauté function

  6. Then you’ll add everything else

  7. Stir it together well before locking on the lid and letting it cook on HI for 10 minutes. Let it sit 5 minutes then quick release
