Irresistible Single-Serving Oatmeal Raisin Chocolate Chip Cookie

Ingredients

  • 1 tbsp peanut butter (or other nut butter)
  • 1 tsp melted coconut oil
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • Pinch of flaky sea salt
  • 1/8 tsp baking powder
  • 2 tbsp rolled oats
  • 2 tbsp whole wheat flour (or sub GF all-purpose)
  • 2 tbsp Chopped chocolate or chocolate chips
  • 2 tbsp raisins

Preparation

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a microwave-safe bowl, melt the peanut butter, coconut oil, and maple syrup in the microwave for 20 seconds.

  3. Whisk in the vanilla extract.

  4. Add the melted mixture to a bowl and stir in the baking powder, oats, and flour until a soft dough forms.

  5. Gently fold in the chopped chocolate or chocolate chips.

  6. Shape the dough into a single cookie on the prepared baking sheet.

  7. Bake the cookie in the preheated oven for 10 minutes, or until the edges are golden brown.

  8. Allow the cookie to cool for about 3 minutes before enjoying the deliciousness!
