Jackfruit and Red Wine Tomato Sauce with Buckwheat Penne
Ingredients
- 1 chopped red onion cooked in 2 Tbs of olive oil
- 1 cup of organic red wine
- 1 cup of fresh jackfruit
- 2 cloves of garlic
- 1 can of chopped tomatoes with basil
- 1 chilli
- 2 tsp of dried organic oregano
- 1/2 cup of fresh basil
Preparation
I added the jackfruit to the onions and cooked it for 10 minutes
Then I added the wine to it and cooked it for another 10 minutes
After this I added the canned tomatoes, fresh chilli, garlic, oregano and continue to cook the sauce for another 10 minutes
I seasoned it with fresh basil, salt and pepper
