Jackfruit and Red Wine Tomato Sauce with Buckwheat Penne

Ingredients

  • 1 chopped red onion cooked in 2 Tbs of olive oil
  • 1 cup of organic red wine
  • 1 cup of fresh jackfruit
  • 2 cloves of garlic
  • 1 can of chopped tomatoes with basil
  • 1 chilli
  • 2 tsp of dried organic oregano
  • 1/2 cup of fresh basil

Preparation

  1. I added the jackfruit to the onions and cooked it for 10 minutes

  2. Then I added the wine to it and cooked it for another 10 minutes

  3. After this I added the canned tomatoes, fresh chilli, garlic, oregano and continue to cook the sauce for another 10 minutes

  4. I seasoned it with fresh basil, salt and pepper
