Lemon Saffron Quinoa Salad
Ingredients
- Water sauté 1 finely chopped green onion tip. Add 1/8tsp saffron threads and 1cup quinoa (pre-soaked to aid digestion). Stir and cook until quinoa pops. Add 2.5cups water and 3/4tsp sea salt. Cover and simmer until liquids are absorbed. Add zest of 1 organic lemon
- juice of 1/2 lemon
- 1/4c fresh basil
- coriander and lemon balm combo. Serve with spinach
- kiwi & herbs of choice. Bon appetite
