Lemon Saffron Quinoa Salad
Ingredients
- 1 finely chopped green onion tip
- 1/8 teaspoon saffron threads
- 1 cup quinoa (pre-soaked)
- 2.5 cups water
- 3/4 teaspoon sea salt
- zest of 1 organic lemon
- juice of 1/2 lemon
- 1/4 cup fresh basil, coriander and lemon balm combo
- spinach (for serving)
- kiwi (for serving)
- herbs of choice (for serving)
Preparation
Water sauté 1 finely chopped green onion tip.
Add 1/8 teaspoon saffron threads and 1 cup quinoa (pre-soaked to aid digestion).
Stir and cook until quinoa pops.
Add 2.5 cups water and 3/4 teaspoon sea salt.
Cover and simmer until liquids are absorbed.
Add zest of 1 organic lemon, juice of 1/2 lemon, 1/4 cup fresh basil, coriander and lemon balm combo.
Serve with spinach, kiwi and herbs of choice.
