Lemon Saffron Quinoa Salad

Ingredients

  • 1 finely chopped green onion tip
  • 1/8 teaspoon saffron threads
  • 1 cup quinoa (pre-soaked)
  • 2.5 cups water
  • 3/4 teaspoon sea salt
  • zest of 1 organic lemon
  • juice of 1/2 lemon
  • 1/4 cup fresh basil, coriander and lemon balm combo
  • spinach (for serving)
  • kiwi (for serving)
  • herbs of choice (for serving)

Preparation

  1. Water sauté 1 finely chopped green onion tip.

  2. Add 1/8 teaspoon saffron threads and 1 cup quinoa (pre-soaked to aid digestion).

  3. Stir and cook until quinoa pops.

  4. Add 2.5 cups water and 3/4 teaspoon sea salt.

  5. Cover and simmer until liquids are absorbed.

  6. Add zest of 1 organic lemon, juice of 1/2 lemon, 1/4 cup fresh basil, coriander and lemon balm combo.

  7. Serve with spinach, kiwi and herbs of choice.
