Lentil Coconut Curry

Ingredients

  • 2 tins of green lentils
  • 1 tin of chopped tomatoes
  • 1 tin of coconut milk
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 tsp salt and pepper
  • 1 tsp mixed herbs
  • 4 tsp curry powder
  • 2 large handfuls of spinach

Preparation

  1. Add the onion to the pan and cook for a few minutes

  2. Add the garlic to the pan and cook for a few more minutes

  3. Add the remaining ingredients to the pan (apart from the spinach) and simmer for 15 minutes

  4. Before serving add the spinach and serve when the spinach has wilted
