Lime Peanut Butter Ramen
Ingredients
- 20 oz of ramen noodles⠀
- 4 tbs of peanut butter ⠀
- 1 tbs of sesame seed oil ⠀
- 1 tbs of chili oil ⠀
- 1/2 tbs of coconut aminos ⠀
- 3 tbs of rice vinegar ⠀
- 1 1/2 garlic cloves⠀
- 1 cup of non-dairy milk ⠀
- 1 cup of water⠀
Preparation
Cook ramen noodles or noodles of choice.⠀
In a blender, add peanut butter, sesame seed oil, chili oil, coconut aminos, rice vinegar, garlic, non-dairy milk, water, and lime juice.⠀
Blend until well-combined. ⠀
In a medium sized pan on low-heat, add broth and cook for 10 minutes or until it thickens up a bit. Add salt to taste. ⠀
When noodles are cooked, add your noodles to the broth and gently mix. ⠀
Top your ramen with some fresh cilantro, baked tofu, peanuts - or whatever you’d like! ⠀
