Lime Peanut Butter Ramen

Ingredients

  • 20 oz of ramen noodles⁣⠀
  • 4 tbs of peanut butter ⁣⠀
  • 1 tbs of sesame seed oil ⁣⠀
  • 1 tbs of chili oil ⁣⠀
  • 1/2 tbs of coconut aminos ⁣⠀
  • 3 tbs of rice vinegar ⁣⠀
  • 1 1/2 garlic cloves⁣⠀
  • 1 cup of non-dairy milk ⁣⠀
  • 1 cup of water⁣⠀

Preparation

  1. Cook ramen noodles or noodles of choice.⁣⠀

  2. In a blender, add peanut butter, sesame seed oil, chili oil, coconut aminos, rice vinegar, garlic, non-dairy milk, water, and lime juice.⁣⠀

  3. Blend until well-combined. ⁣⠀

  4. In a medium sized pan on low-heat, add broth and cook for 10 minutes or until it thickens up a bit. Add salt to taste. ⁣⠀

  5. When noodles are cooked, add your noodles to the broth and gently mix. ⁣⠀

  6. Top your ramen with some fresh cilantro, baked tofu, peanuts - or whatever you’d like! ⁣⠀
