Lime Peanut Butter Ramen

Ingredients

  • 20 oz of ramen noodles
  • 4 tbs of peanut butter
  • 1 tbs of sesame seed oil
  • 1 tbs of chili oil
  • 1/2 tbs of coconut aminos
  • 3 tbs of rice vinegar
  • 1 1/2 garlic cloves
  • 1 cup of non-dairy milk
  • 1 cup of water
  • Juice of 1 lime
  • Salt to taste

Preparation

  1. Cook ramen noodles or noodles of choice.

  2. In a blender, add peanut butter, sesame seed oil, chili oil, coconut aminos, rice vinegar, garlic, non-dairy milk, water, and lime juice.

  3. Blend until well-combined.

  4. In a medium sized pan on low-heat, add broth and cook for 10 minutes or until it thickens up a bit. Add salt to taste.

  5. When noodles are cooked, add your noodles to the broth and gently mix.

  6. Top your ramen with some fresh cilantro, baked tofu, peanuts - or whatever you’d like!

  7. Enjoy!
