Lime Peanut Butter Ramen
Ingredients
- 20 oz of ramen noodles
- 4 tbs of peanut butter
- 1 tbs of sesame seed oil
- 1 tbs of chili oil
- 1/2 tbs of coconut aminos
- 3 tbs of rice vinegar
- 1 1/2 garlic cloves
- 1 cup of non-dairy milk
- 1 cup of water
- Juice of 1 lime
- Salt to taste
Preparation
Cook ramen noodles or noodles of choice.
In a blender, add peanut butter, sesame seed oil, chili oil, coconut aminos, rice vinegar, garlic, non-dairy milk, water, and lime juice.
Blend until well-combined.
In a medium sized pan on low-heat, add broth and cook for 10 minutes or until it thickens up a bit. Add salt to taste.
When noodles are cooked, add your noodles to the broth and gently mix.
Top your ramen with some fresh cilantro, baked tofu, peanuts - or whatever you’d like!
