Mediterranean Raw Cauliflower Salad

Ingredients

  • 1 cup chopped dried apricots
  • 1/2 cup spring onion, finely chopped
  • 1 1/2 tsp garam masala
  • 1 tsp cumin
  • juice of 1 large lemon
  • 2 tbs olive oil
  • 1 tbs apple cider vinegar
  • 1 tsp onion powder
  • handful chopped coriander
  • handful chopped mint
  • sweet chickpeas
  • 1 bpa free can chickpeas
  • 1 tsp coconut sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1 tbs olive oil

Preparation

  1. Cut the cauliflower into chunks and pulse in food processor until resembles rice (be careful not to over blend as it will turn into mush!)

  2. Combine all ingredients together

  3. Aste and add more of the above spices if needed, season with salt and pepper if desired

  4. Combine all ingredients and bake for about 30 mins or until crispy
