Mushroom Pasta

Ingredients

  • 2 portions of pasta
  • 1 cup of sliced mushrooms
  • 1 cup of vegan milk ( i used soy milk from mylk labs by @floria_tradingbh )
  • 1/4 cup white onions
  • 1-2 cloves of crushed garlic
  • 1/4 vegan parmesan plus more for garnish
  • 1 tablespoon of oil
  • salt and white pepper to taste

Preparation

  1. Cook pasta as on the packet and keep 1 cup of its water

  2. Heat oil and sauté onions until translucent

  3. Add mushrooms , salt and pepper and cook until water completely evaporates

  4. Add garlic and sauté for 1 minute

  5. Add milk and parmesan

  6. Cook until sauté thickens ( add pasta water if to thick )

  7. Toss in pasta and serve with more parmesan and enjoy
