Napoli Inspired Pizza Dough Recipe

Ingredients

  • 2 cups type 00 flour (see notes)
  • 1 tsp instant yeast
  • 2 tsp kosher salt
  • 1 1/2 cups warm water

Preparation

  1. Whisk the flour, yeast, and salt. Pour in the water and mix using a heavy wooden spoon. Pour dough onto counter and knead for 5-8 min. Add more flour as needed so that it's not too sticky. The dough should be soft but not sticky sticky. ?

  2. Place dough into oiled glass, ceramic, or plastic bowl. Should be big enough to allow dough to double in size. Cover with lid or plastic wrap. Let rest for 2 hours to double. Punch down, cover again, and refrigerate overnight or up to two days. ?

  3. Remove dough from fridge and let warm on the counter in the covered bowl for an hour. Divide in half. Roll each into a ball and let rest on an oiled baking sheet, covered, for an hour. ?

  4. Now you're ready to top and bake! See my last pizza post for those details. Dough freezes really well and all you need to do is place the divided dough into a plastic bag and freeze for up to two weeks. Remove dough ball the day before use and place in the fridge overnight. The next day you're ready to pizza it up
