Nutritious Poached Peach Delight

Ingredients

  • 5 just ripe peaches, halved and stone removed.
  • 1 cinnamon stick
  • 2 tbsp. maple syrup
  • 1 cardamom pod, split lengthways
  • 1/2 tsp vanilla bean paste
  • 1 cup water, more if needed

Preparation

  1. Place all ingredients excluding the peaches into a large pot and simmer over medium heat for about 5 minutes.

  2. Add the halved peaches, cover and simmer for 5 minutes or until tender, add more water gradually if needed.

  3. Use a slotted spoon to transfer peaches to a bowl, set aside to cool for 30 minutes.

  4. Peel skin and cut peaches into wedges, discard skin.

  5. Serve with yogurt, oats, granola, or coconut ice-cream.

  6. Transfer peaches to an airtight container and then add the cooled syrup on top to be placed in the fridge.
