Nutritious Poached Peach Delight
Ingredients
- 5 just ripe peaches, halved and stone removed.
- 1 cinnamon stick
- 2 tbsp. maple syrup
- 1 cardamom pod, split lengthways
- 1/2 tsp vanilla bean paste
- 1 cup water, more if needed
Preparation
Place all ingredients excluding the peaches into a large pot and simmer over medium heat for about 5 minutes.
Add the halved peaches, cover and simmer for 5 minutes or until tender, add more water gradually if needed.
Use a slotted spoon to transfer peaches to a bowl, set aside to cool for 30 minutes.
Peel skin and cut peaches into wedges, discard skin.
Serve with yogurt, oats, granola, or coconut ice-cream.
Transfer peaches to an airtight container and then add the cooled syrup on top to be placed in the fridge.
