Nutritious Veggie Bowl with Homemade Peanut Sauce
Ingredients

- Baked tofu
- Roasted sweet potatoes
- Roasted broccoli
- Cucumbers
- Radishes
- Creamy peanut butter
- Soy sauce
- Minced garlic
- Ground ginger
- Maple syrup
- Apple cider vinegar
- Sriracha
- Dairy-free milk
Preparation
Prepare the peanut sauce by combining creamy peanut butter, soy sauce, minced garlic, ground ginger, maple syrup, apple cider vinegar, sriracha, and dairy-free milk in a bowl. Mix everything thoroughly.
Cut 1/2 block of tofu into cubes. Toss the tofu cubes in cornstarch, garlic powder, and salt. Arrange the tofu on a baking tray.
Bake the tofu in the oven at 400°F (200°C) for 15 minutes. Remove from the oven, toss the tofu cubes in the peanut sauce, and bake for another 15 minutes.
Chop the sweet potatoes and broccoli. Place them on a baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder. Bake at 400°F (200°C) for 35-40 minutes.
Assemble the bowl by adding @livivafoods Shirataki Rice as the base. Top with roasted sweet potatoes, roasted broccoli, baked tofu, cucumbers, and radishes.
Drizzle more peanut sauce over the bowl and sprinkle with sesame seeds.
