Nutty Date Energy Balls
Ingredients
- 180g juicy medjool dates
- 4 tablespoons cacao powder
- 4 heaped tablespoons cashew butter or peanut butter
- 300g nuts (pecans, cashew nuts, walnuts, and pistachios)
- 100g sunflower seeds
- Toppings of choice: chia seeds, desiccated coconut, sesame seeds, rose petals, pistachios
Preparation
Blitz all nuts and seeds in a food processor to make a powder.
Add all the remaining ingredients to the food processor and pulse blend.
With each pulse, the ingredients will start to combine.
Continue pulsing until the mixture starts to clump together.
Take about 1 tablespoon of the mixture at a time and use your hands to mold about 20 small balls. Place them on a plate.
Enjoy the balls as they are or roll them in your choice of topping.
To coat the balls with a topping, place your chosen topping on a plate. After forming each date ball, roll it in the topping.
Enjoy the energy balls right away or store them in an airtight container in the fridge for a couple of weeks.
