Oil Free Vegan Cauliflower Ceviche

Ingredients

  • 1 head of cauliflower - boiled for at least 5 minutes to soften
  • 1 lemon, juiced
  • 2-3 tomatoes, finely chopped
  • 1 jalapeno, finely chopped (remove seeds if you don't want it too spicy)
  • 1/2 onion, finely chopped
  • 2-3 persian cucumbers, finely chopped
  • 1/2 avocado, finely chopped
  • Few sprigs of cilantro
  • Spices: garlic powder, crushed black pepper - to taste

Preparation

  1. After boiling cauliflower - drain water - then chop and add lemon juice (add more if needed - should be tangy) and spices

  2. Let cool - add rest of veggies and enjoy with chips
