Oil Free Vegan Cauliflower Ceviche
Ingredients
- 1 head of cauliflower - boiled for at least 5 minutes to soften
- 1 lemon, juiced
- 2-3 tomatoes, finely chopped
- 1 jalapeno, finely chopped (remove seeds if you don't want it too spicy)
- 1/2 onion, finely chopped
- 2-3 persian cucumbers, finely chopped
- 1/2 avocado, finely chopped
- Few sprigs of cilantro
- Spices: garlic powder, crushed black pepper - to taste
Preparation
After boiling cauliflower - drain water - then chop and add lemon juice (add more if needed - should be tangy) and spices
Let cool - add rest of veggies and enjoy with chips
