Oil Free Vegan Cauliflower Ceviche
Ingredients
- 1 head of cauliflower
- 1 lemon
- 2-3 tomatoes
- 1 jalapeno
- 1/2 onion
- 2-3 persian cucumbers
- 1/2 avocado
- Few sprigs of cilantro
- Garlic powder to taste
- Crushed black pepper to taste
Preparation
Boil the cauliflower for at least 5 minutes to soften.
Drain the water from the cauliflower.
Chop the cauliflower into small pieces.
Add juice from 1 lemon and spices (garlic powder and crushed black pepper to taste). Add more lemon juice if needed for tanginess.
Let the mixture cool.
Add the chopped tomatoes, jalapeno (remove seeds if you don't want it too spicy), onion, persian cucumbers, avocado, and cilantro.
Enjoy the ceviche with chips.
