One Bowl Carrot Cake Babana Bread

Ingredients

  • 2 mashed bananas
  • 2 eggs/flax-seed eggs
  • 1/2 cup coconut sugar
  • 1/2 cup olive or coconut oil
  • 1/3 cup coconut yogurt
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups whole-meal or all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups grated carrots
  • 1 cup chopped walnuts
  • 1/2 cup cranberries or raisins

Preparation

  1. Soak cranberries/ raisins in hot water for 15 mins, drain and set aside

  2. Preheat oven to 180c and line a baking tin with parchment paper

  3. In a mixing bowl, using a hand electric mixer beat mashed banana and eggs/flax-seed eggs together

  4. Beat in sugar and oil

  5. Add in yogurt and vanilla, mix until combined

  6. Sift in flour and baking soda and add in spices, mix until combined

  7. Fold in carrots, walnuts and cranberries/raisins, mix until just combined

  8. Spoon the mixture into the prepared baking tin and bake for 40 minutes or until a toothpick inserted into the middle comes out clean

  9. Remove from the oven and let cool for 10 minutes in the baking tin, before removing

  10. Transfer to a wire rack to cool completely

  11. Cut, serve and enjoy!
