Our Artichoke and Spinach Rice Balls

Ingredients

  • 1 3/4 cups of cooked sushi rice
  • 3/4 cup of chopped artichokes hearts
  • 3/4 cup of wilted spinach
  • 1 cup of vegan cheese (we used @heidihoorganics smokey chia cheeze)
  • for batter
  • 3/4 cup + 1 tbs of water
  • 3/4 cup flour
  • for breading
  • 3/4 cup of flour
  • 3/4 cup of breadcrumbs
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preparation

  1. In a large bowl combine rice, artichoke, spinach, and cheese

  2. Stir components until well combined and place in fridge for three hours

  3. In a medium sized bowl combine ingredients for batter

  4. Stir well and set aside

  5. Combine ingredients for breading into a medium sized bowl stir well and set aside

  6. In a medium sized pot fill with oil enough to cover each ball

  7. Heat oil to 350°

  8. Scoop a small portion of rice filling into hands and form into a ball

  9. Dip ball into batter and then breading covering well in each

  10. Fry for 3 minutes or until golden brown

  11. Set rice balls onto a drying rack and repeat process until finished

  12. Garnish bowl with sauce of choice and enjoy???? #threebunnies
