Nutrient Packed Green Juice and Beet Chia Pudding

Ingredients

Green juice

  • Spinach
  • Kale
  • Celery
  • Carrot
  • Apple
  • Spirulina powder
  • Wheatgrass powder
  • Lemon
  • Pineapple
  • Cucumber

Beet chia pudding

  • 1/2 cup chia seeds
  • 1 cup filtered water
  • 1 cup canned coconut milk
  • 1/8 cup beet juice
  • 1/8 cup coconut nectar
  • Berries of choice

Preparation

  1. Combine all ingredients for the chia pudding into a container and stir well. Cover and set in the fridge for 4 hours. Once the time is up, remove from the fridge and top with berries.

  2. For the juice, combine all ingredients into a blender. Blend until smooth and pour into a large strainer over a large bowl. Stir with a spoon and press the juice through with hands if needed. Use a cheese cloth to line the strainer for easier squeezing if desired. Once all juice is collected, place the bowl in the fridge to cool if needed or serve right away.
